recipe #1 time!

cherry clafoutis!

  • unsalted butter, to grease baking dish/cast iron skillet.
  • a handful of cherries!
  • 1/4 cup (50g) granulated sugar, divided (2 tbsps/25g + 2 tbsps/25g).
  • 2 eggs, room temperature.
  • 1/2 cup (120g) heavy cream.
  • 1/4 (60g) whole milk.
  • 1 tsp vanilla extract.
  • 1/4 tsp kosher salt.
  • 3 tbsps (23g) all-purpose flour.
  • toppings: powdered sugar & fresh cherries.

  • tools

    • medium baking dish or cast iron skillet
    • greased with unsalted butter
    • spatula
    • blender
    • mesh sieve

    • steps

    • preheat oven to 350f
    • in a greased baking dish, add in a handful of cherries and 2 tbsps (25g) of sugar. mix and let it sit while making clafoutis batter
    • in a blender, combine eggs, remaining 2 tbsps (25g) sugar, heavy cream, milk, vanilla extract, kosher salt, & flour. blend on medium for about 1 minute until combined
    • pour batter into baking dish over cherries through a mesh sieve
    • bake for anywhere from 30-45 minutes. clafoutis should be puffed and golden brown. insert a toothpick, if it comes out clean, it is done
    • garnish with powdered sugar and more fresh cherries. serve immediately

    • notes

    • you can also use oven-safe bowls or mini ramekins
    • feel free to pit the cherries if you want before adding in cherries to the batter in step 2
    • feel free to swap out cherries for your favorite fruits - berries also work well!
