an easier take on red velvet cake!


    1. 1 red velvet boxed cake mix
    2. additional ingredients needed for the boxed cake mix--
      • usually: 1 cup water, 3 eggs, 1/2 cup vegetable oil
    3. substitutions that i make:
      • replace water with any type of milk, plant-based milk works!
      • replace vegetable oil with unsalted butter
    4. optional: add in about 1/4 cup plain greek yogurt for extra rich & moist cupcakes
    5. extra unsalted butter, to grease cake pan(s)
    6. cream cheese frosting
    7. 4oz cream cheese, softened
    8. 1/4 cup (1/2 stick, 4 tbsps) unsalted butter, softened
    9. 1 tsp vanilla extract
    10. pinch of salt
    11. 1 1/2 cups powdered sugar


    1. your choice of cake pan(s)
    2. whisk, hand mixer, or stand mixer
    3. rubber spatula
    4. serrated knife
    5. mesh sieve


    1. for cakes, follow the directions on the boxed cake mix
    2. i usually bake three 4” mini cakes at 350f for about 15 minutes. poke cakes with a skewer, if skewer comes out clean, cakes are done
    3. let cakes cool completely before assembling
    4. after letting cakes cool, i take a serrated knife and cut the tops off cakes to create a flat surface. i wrap cakes in plastic wrap and let them chill in the fridge for 30 minutes. this make it easier to put cream cheese frosting and assemble cake
    5. for cream cheese icing, combine cream cheese, butter, vanilla extract, & pinch of salt with a hand mixer or wooden spatula until light and fluffy. once smooth, sift in powdered sugar and mix until well combined. cream cheese frosting should be smooth. adjust thickness to your liking
    6. assemble cakes to your liking! layer cakes with cream cheese icing and and top with a layer of cream cheese or any toppings you like - it’s super versatile!


  • if you’re making a bigger sized cake pan, you may want to double the cream cheese recipe with leftover batter, i always make cupcakes. i made three layers of 4” mini cake and 10 cupcakes with this recipe. adjust to your needs.
  • topping ideas: maraschino cherries, red velvet cake crumbs, berries, etc.
  • to make red velvet crumbs, gently break some pieces of baked cake onto a sheet pan and bake at 350f for about 3 minutes. let cool, then break the crumbs up with your fingers. if you bake for too long, the crumbs will turn brown
