recipe #6 time!

tiramisu! (the regular kind this time)


    1. 1 egg
    2. about 1/2 cup mascarpone cheese
    3. 1 tbsp sugar
    4. about 1/2 cup of heavy cream
    5. about 2 tbsps cocoa powder
    6. 8 ladyfingers (savoiardi)
    7. 4 shots espresso or about 1/2 cup strong coffee


    1. baking dish or bowl - i used a small 18 oz square pyrex dish
    2. double boiler: small pot + small bowl that fits snuggly on top of the pot
    3. whisk, hand mixer, or stand mixer
    4. spatula
    5. mesh sieve


    1. using the double boiler method, whisk the egg and sugar until light and airy. remove from heat and add in mascarpone cheese
    2. whip the heavy cream until soft-medium peaks. add this to the mascarpone mixture and gently fold in until well combined
    3. extract 4 shots of espresso and let cool completely
    4. dip ladyfingers into the espresso for 5 seconds on each side and lay in dish until the dish is filled with a layer of ladyfingers
    5. spread the cream over the ladyfingers. then repeat step 3 and 4 until dish is filled (cream should be the last layer)
    6. using a mesh sieve, dust with cocoa powder
    7. chill in the fridge for 2 hours or until cool


  • for matcha tiramisu: replace espresso with matcha (combine matcha powder with warm water) and replace the cocoa powder with matcha powder
